Vada Pav

Vada pav is the most loved and one of the popular street food of mumbai. It can be had for breakfast, lunch or snacks and goes very well with Indian tea and coffee. Vada is typically a deep fried snack and pav is nothing but a bun split into half. Vada pav is essentially a deep fried potato ball (called as batata vada in marathi) sandwiched between the two slices of pav served with a sweet tamarind chutney, a green mint and coriander chutney, some deep fried green chillies and dry garlic chutney



What you’ll need :


8 pav

4 boiled medium sized potatoes

7-8 curry leaves chopped

2-3 tbsp finely chopped coriander leaves

2 tsp turmeric powder, asafoetida, mustard seeds

2-3 green chillies finely chopped (As per taste)

7-8 curry leaves

1 cup chick pea flour

A pinch of baking soda

1 tsp lemon juice

salt as per taste

2 glasses of water


How to :


Making chickpea batter

In a bowl, add chickpea flour, 1 tsp each of turmeric and chilly powder, baking powder, salt and mix together. Add about a cup of water and stir well so that there are no lumps formed in the batter. The batter should be thick enough to coat the potato balls uniformly without dripping too much. Let it rest for 15 min.


Making potato balls


Peel the skin of the boiled potatoes and mash them with hand. Do not grate them as the consistency changes and it is no more a batata vada. In a non stick pan, add 2 tbsp of cooking oil. Once the oil heats up, add mustard seeds, green chillies, curry leaves, turmeric and asafoetida. As soon as the mustard seeds begin to sputter, add the mashed potatoes, salt and mix well. Remove from heat and allow to cool. Once cooled, add chopped coriander leaves and a tsp of lemon juice and mix well.


Assembly


Divide the mixture into eight equal portions and shape them into balls.


Heat sufficient oil in a deep frying pan. Dip the potato balls in the gram flour batter and deep fry till golden and crisp on the outside. Drain on absorbent paper.

Slit each pav, place a vada and press lightly. Spread some dry garlic chutney, mint and tamarind chutney and serve immediately.


Since I couldn’t find any pav, I had to settle for some bread. I should admit that vada pav tastes better than vada bread ;)
