Chaas - Indian buttermilk


Chaas or Indian buttermilk is one of the best ways to keep your body cool during the hot summers.


It helps to calm the stomach after a spicy meal and washes those fats we consume over the day. It’s also the best way to keep you hydrated during the hot seasons. Some studies have also shown to reduce cholesterol, high blood pressure and prevent vitamin deficiency.


Chaas can be consumed plain, but a little salt is usually added. Numerous other seasonings and flavourings can be added to salted Chaas, either singly or in combination with each other. Adding a few spices like toasted cumin powder and ginger increases the medicinal values of Chaas.

Sugar can also be added to chaas, but it should not be combined with the spices or salt. It then becomes the diluted version of the Lassi.


If you are wondering what is this magic drink with so many health values, it is nothing but a yogurt based drink. I am already having a glass of chaas as I write this recipe and you’ll be surprised how easy it is to make it.


What you’ll need :


Fresh unflavoured yogurt - 1 glass

Cold water - 2 glasses

Salt as per taste

Cumin seeds - 1 teaspoon (or use roasted cumin powder)

Ginger - 1 inch (chopped finely or grated)

Coriander leaves (or mint leaves)

Green chilli - very finely chopped (optional)


How to :


If you do not have roasted cumin seed powder, then roast the cumin seeds in a wok for 2 minutes on medium heat until it releases the aroma. Once cooled powder it in a mortar and pestle. To this add ginger, green chillies, salt and grind them until they form a thick paste. Add this to yogurt and mix in the water. Add finely chopped coriander or mint leaves to the mixture. I usually make this in a glass bottle where in I add the ground paste, yogurt, herbs, water and give it a good shake for a 20 seconds.

The drink is ready…tadaaa…Serve with more ice cubes if you want the consistency to be very light, but adjust the salt before you serve.


Try this once and I’ll bet you will simply love it. Moreover, what’s better is it’s refreshing, cold and satisfies your thirst without those added calories of coke or sugary fruit drinks!
