Greek salad

Thinking of a fresh and colourful salad - this greek salad perfectly fits the description. Fresh juciy tomatoes, crispy lettuce and cucumbers, crumbly fetta and pungent onions is a perfect starter for any lunch or dinner


Greek salad is made with pieces of tomatoes, sliced cucumbers, onion, feta cheese, olives typically seasoned with salt and oregano, and dressed with olive oil. Here is my own version of greek salad easy to make in may be 5 minutes :)

What you'll need :

For the salad

4-5 lettuce leaves torn into small pieces 3 tomatoes cut into wedges 1 tbsp capers 7-8 black olives washed well 1 tbsp of capers washed well (optional) 6-7 pickled onions(optional) 1/4 red onion cut very thinly 1/2 cucumber sliced into think half moons 1/2 cup colored bell peppers cuts into small squares Half cup of feta cheese cubes

4-5 mint leaves

For the dressing

1 part lemon juice 2 parts olive oil ½ teaspoon dried oregano ¼ teaspoon sea salt ¼ teaspoon freshly ground black pepper 1 tbsp Dijon mustard

½ teaspoon fine sugar

How to :

In a small glass jar add all the ingredients for dressing and shake well. Once the liquid turns into a thick translucent liquid, it is ready for dressing.

To assemble the salad, toss the salad ingredients in a large bowl with enough dressing to moisten.

You can have the salad by itself or as a base for your seared meat. Since I cook only vegeterian, I decorate my hasselback potatoes on a bed of greek salad :)
