Cream of Mushroom

When it’s cold and chilly outside, who doesn’t like curling up on the sofa, warm and cosy with a big bowl of soup watching your favorite TV show. If you are a soup lover, you should try this very easy cream of mushroom soup and maybe with a side of garlic bread. Dunk the bread in the soup or have it by itself…you will simply not stop licking the bowl 😉

What you’ll need:

1 packet mushrooms sliced 1 cup vegetable stock 2 tbsp butter 1 small onion finely diced 1 clove of garlic finely diced 1/2 cup milk Salt and pepper as per taste

How to:

In a sauce pan, add a tbsp of butter and saute the sliced mushrooms until they release water. Keep aside half of the sauteed mushrooms to be used later.

In another pan, add butter and saute the garlic and onions (should be finely diced) until translucent. Add the one half of the sauteed mushrooms and cook for 2 minutes. Once the mixture cools down, blend it with milk. Add vegetable stock if needed. Pour the mixture back in a sauce pan and add the remaining mushrooms. Bring the mixture to a boil and adjust salt/pepper as per taste.
