Home made icecream

You don't have to own a fancy ice cream maker to enjoy a homemade ice cream. A glass of whole milk, some good quality whipping cream and a can of condensed milk is what you need to make your summer party a big hit. If you know how to make a basic ice cream, then the sky is the limit to try out variations and flavours to your ice cream. Here is my recipe for a basic pineapple ice cream. Mix and match the flavours you crave!


What you'll need:


1 cup full cream milk 1/2 cup milkmaid 1 tbsp corn flour 1 cup whipping cream (whipped till hard peaks) Finely chopped pineapple (1/2 cup) Roundly sliced pineapple (1/2 inch thick) 1 tbsp honey Powdered sugar (2 tbsp)


How to :


1. Keep 2 tbsp of milk aside and add corn flour to it.

2. Heat rest of the milk on medium heat in a heavy bottom pan until the milk comes to a boil. Add the corn flour mixture and heat until the milk thickens. Allow to cool to room temperature.

3. Cook the finely chopped pineapple with the powdered sugar and a tbsp of water. Cook until the pineapples are soft and syrupy. Allow to cool to room temperature.

3. In a large bowl, add the condensed milk, whipped cream and the thick milk with corn flour (add sugar as per your liking. Remember milk-maid already has sugar, and whipped cream too has sugar sometimes) and whip for a good 5 min on medium speed.

4. Spoon into an airtight tub or container, cover and freeze for 12 hours or overnight. Serve straight from the freezer. The basic ice-cream is ready.

5. Sprinkle a pinch of salt and a tsp of honey on the sliced pineapple and grill until the pineapple catches the grill marks on both sides. Allow the pineapple to cool.

6. Serve with grilled pineapple with a scoop of pineapple ice-cream

Replace pineapple with mango or any fruits of your choice to have variations in ice-creams. Add some crushed biscuits (Oreo or Britannia fruit cake biscuits) to plain ice creams for biscuit ice cream!
