Quesadilla


A quesadilla is essentially two tortillas filled with cheese and meat(or veg) and stacked on top of each other. Quesadillas are traditionally mexican, but it has changed and evolved over the years, every person giving his/her own twist to suit their taste.


A flour tortilla is heated on a griddle, then flipped and sprinkled with a grated, melting cheese such as Monterey Jack or Cheddar cheese. Once the cheese melts, other ingredients; such as shredded meat, peppers, onions or guacamole may be added, and it is then folded and served.


Quesadillas are my all time favourite and its as comforting as a grilled cheese sandwich. It’s a quick week night meal that transforms leftovers into something tasty and easy. Feed your family with this dinner that’s on table in less than 30 minutes and they’ll keep wanting it every other weeknight!


Try this simple bell pepper and mushroom quesadilla which works good as a vegeterian starter or appetizer or even as a wholesome meal during busy nights when you don’t want to spend too much time in the kitchen.


What you'll need :


1/2 cup bell peppers (red, yellow and green) cubed

1/2 cup mushrooms finely chopped

1 small onion finely chopped

1 tsp chilli flakes, oregano

1 tsp garlic powder

Salt and pepper to taste

1 cup shredded cheddar cheese

2 tablespoons coarsely chopped fresh cilantro

1 tsp olive oil

Guacamole (optional)

Salsa, for serving (optional)

Sour cream, for serving (optional)

2 tortilla


How to :


In a small pan, add a tsp of olive oil and saute the onions for a minute. Add bell peppers, mushrooms, salt and spices until the vegetables are sautéed and the mixture is dry.


Heat a large frying pan over medium heat until hot, for about 3 minutes. Place a tortilla in the pan and warm it on both sides. Remove it from the pan. Follow the same process for the other tortilla. In a big plate, place one tortilla and uniformly spread a layer of cheese. Now spread the sautéed bell pepper & mushroom mixture, some cilantro and spread another layer of cheese.


Place the other tortilla on the layer of cheese.


Gently place this on the heated pan and allow to cook until the cheese melts for about a minute. Using a spatula, carefully flip the quesadilla over and cook until the underside of the second tortilla is crisp and golden brown. Remove from pan and allow to cool.



Serve the quesadillas cut into quarters, with the salsa, guacamole, sour cream or a plain simple ketchup.
