Baked Beans Frittata

Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. This version is my own creation, a delicious frittata perfect for breakfast, brunch or just any time! It's full of creamy kidney beans, bell pepper and lots of herbs and thus I call it a mexican dish ;)


What you'll need :

4 eggs 1/4 cup milk 2 tablespoons chopped fresh cilantro leaves (optional) Salt and pepper as per taste Freshly ground black pepper 1 medium tomato finely chopped 2 tbsp finely chopped onions 1 medium red bell pepper finely chopped 1 tablespoon olive oil ½ teaspoon kayeene paprika 1/2 cup cooked kidney beans 1 large tortilla 1/2 cup shredded cheese

How to :

In a heavy hot skillet add some olive oil and saute the onions until slightly transclucent. Add the tomatoes and the bell peppers and sautee for another minute. Add paprika, salt and pepper as per taste and allow it to cool for sometime.

In a non stick pan, gently heat the tortilla on both sides for 15 seconds. In medium size bowl, using a fork, blend together eggs, herbs, milk, salt and pepper.

Grease a 12-inch non-stick oven safe pan lightly with olive oil and place the tortilla. Evenly spread the kidney beans mixture and then pour the egg mixture. Top up with shredded cheese. Place the pan into oven at 180 degrees for 5-8 minutes, until the top curst is lightly browned and fluffy.
