Chocolate fudge

Now a days I find chocolate and chocolate based snacks to be great motivators. Everyone loves chocolates. If someone has a lot of work to do, put a piece of fudge in a glass container, so that they can see it and let them know that if they accomplish the task, they can eat the fudge. You’ll definitely get a reaction :)

Chocolate fudge is probably the easiest dessert recipe that can be put together within minutes and requires no special equipment or ingredients. This fudge is a very rich dessert with chocolates, butter and nuts but eat moderately and it won’t hurt :) To give a healthy twist to the otherwise chocolate rich fudge, add oatmeal for a chewy texture and to give some mass to this otherwise softy and gooey dessert.

What you'll need

1/3 cup roasted and powdered oats (or almond meal) 100 gms dark chocolate chips 1/5 cup raisins 1/2 cup chopped walnuts 1 cup condensed milk 1/4 cup butter 1 tbsp icing sugar 1/2 tsp vanilla essence

How to

Heat the dark chocolate in a double boiler until the chocolate melts. Alternatively, microwave the chocolate chips for a minute on high until the chocolate melts. Keep it aside.

Heat a non-stick pan on medium flame. Add the condensed milk, melted chocolate, vanilla essence and heat for 2 minutes. Add the powdered oats/almond meal to the mixture and check the taste. Added icing sugar to adjust the sweetness if needed. Turn off the heat and add the chopped walnuts and raisins and mix well. Spread the mixture in a butter greased mould and keep aside for 15-20 minutes until the mixture cools. Remove from mould and serve as you like. Store the fudge in the refrigerator for up to a week.
