White chocolate fudge


Diwali is never complete without sweets - kheer, basundi, burfi, ladoo and halwa. But this year, I am making a special burfi very different from a traditional one - chocolate and black currant fudge with the goodness of multigrain biscuits. A very quick and easy one to make when you are running short of time. and a colourful sweet to celebrate this Diwali


What you need


100 gms block of white cooking chocolate 1/2 cup sweetened condensed milk 50 gms salted butter at room temperature 1/2 cup almond meal 4 tbsp of black currant jam 1 packet of Mc vitties oats and cashewnut biscuits crushed


How to


Lightly grease an 5-inch by 5-inch pan with butter. Press a piece of parchment on the insides of the pan. Again grease the parchment with some butter and set aside. In a glass bowl microwave chocolate on high for 30 seconds. Place a non stick pan on medium heat and add butter and condensed milk. Once the mixture comes to a boil, add the crushed biscuits, almond meal, jam and stir well. Turn off the heat and stir lightly and spread the mixture evenly on the pan and allow to rest in the refrigerator for at least 30 minutes. Once the fudge hardens slice into small cubes. Store left over sweet in the fridge covered for up to 2 weeks.
