Avocado toast

Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins, and folic acid. They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit.


Here is a little idea treat that will upgrade your humble toast to a fancy and special breakfast treat.


What you’ll need:

1 large avocado 1 medium sized tomato salt, pepper and lime juice as per taste Cheese cubes (cut into small pieces)

A few slices of bread

Butter

How to:

Scoop our the avocado from its outer covering and deseed it. If the pulp is very soft, simply mush it up with a spoon or else using a knife cut it into very small pieces. In a large bowl, place the scooped avocado. Mix it up with some finely sliced tomato. Sprinkle some salt, pepper and squeeze in some lime juice.

Butter the bread slightly on both sides and toast it for about 30 seconds each side on a heated griddle. Apply the guacamole on one side of toast along with a few cheese cubes. Serve immediately.
