Carrot kismuri
Kismuri in a konkani word for salads. In konkani cuisine, salads are an important side dish for any lunch or dinner. There are many varieties of kismuri and carrot kismuri is one of the quickest and easiest among the lot.
All you need is some juicy and sweet carrots and you are all set.
What you'll need :
4-5 Carrots
3-4 tbsp grated coconut
1 tsp lime juice
Handful of coriander and mint leaves
1 small onion, finely chopped
1 green chili finely chopped
Salt as per taste
How to :
Wash and grate the carrots, I used a mix of orange, purple and white ones. Chop the onions, green chilies and herbs. Mix all the ingredients in a mixing bowl and add salt to taste. Squeeze in a little lime juice and add freshly grated coconut. Serve as a side dish or a salad.
Here is another version of a simple carrot salad. Cut the carrots into very thin rounds. Sprinkle with salt, pinch of sugar, chat masala and some chopped mint.
