Potato wedges

Who can ever say no to French fries? I have seen my three year old niece whose face lights up every time she sees them and happy to have them anytime of the day. Here is my version of French fries, made a bit healthier without the use of preservatives and deep frying in god knows which oil. A sure crowd pleaser but requires a bit of prep to be done before hand.



What you'll need :

Olive oil 2 cloves of garlic finely grated 1/2 tsp salt, pepper, paprika 2 springs of thyme, sage (optional) 3 tbsp olive oil 1 tsp sesame seeds 3 large baking potatoes


How to :

1. Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise. You will have six wedges out of each potato. If you want to peel the potato, you can do that too. But I like it unpeeled, as it keeps the wedges intact once baked.



2. In a separate bowl, mix the oil with the spices mentioned in the ingredient list. Now drop the potatoes in this mix and hand toss them so that the wedges are evenly coated with the oil & spice mixture. Allow the potatoes to rest for at least 15 minutes



3. Preheat the oven to 180 degrees centigrade. Line the baking tray with a silver foil. This is to prevent the wedges sticking to the baking tray and to avoid the trouble of cleaning up the tray later. Spread the potatoes on the tray and if there is any leftover liquid in the bowl, pour it on top of the arranged wedges. Here you find that the wedges are very close to one another, but later I moved them to another tray. If the wedges are touching each other, they won't bake uniformly



4. Bake the potatoes for around 45 minutes turning to the other cut side after about 25 minutes. Bake until the wedges are cooked and turn brown. Allow to cool and serve with some ketchup!
