Savoury muffins

Tired of a sweet muffin for breakfast or looking for out of the box dinner ideas or even a picnic box? These savoury muffins serves all these purposes when you want to take shortcuts in kitchen, have a filling meal and not make you sneak off to the kitchen for a snack every now and then.


What you’ll need


1 cup buttermilk

2 cups all purpose flour

3 tablespoons extra-virgin olive oil

2 tablespoons butter, melted

1 cup grated Cheddar cheese

1/4 cup finely diced bell pepper

2 tbsp finely chopped chives

2 tsp baking powder

2 eggs


How to


1. Preheat the oven to 180 degrees


2. Sift the flour, baking powder and salt into a large bowl. In a separate bowl, whisk together the eggs, buttermilk, butter and olive oil


3. Now fold the wet ingredients into the flour, using very little folding movements. Add the cheddar cheese, bell peppers, chives and mix gently with only a few strokes


4. If you are using muffin cases, arrange them in the tins and spoon the mixture into them


5. Bake for about 20 minutes, or until well risen and golden. Remove the muffins from the tins to a rack and eat as warm as possible.


You could also have them for lunch or dinner with a bowl of stroganoff or soup and dunk in the muffins to make them moist :)
